Summer Solstice Cordial Recipe!

Summer is here and it is time to celebrate. I love to create special drinks for special occasions! Learn how to make herbal cordials and you will always have the most interesting parties! People stop asking you to bring food to the potluck and request that you bring the drinks instead!

Summer Solstice is the perfect occasion to capture the season in a delicious herbal cordial. It is so fun to get together with a friend and make a cordial that will add that extra touch to your summer feasts. Get yourself some small cordial glasses and toast your health and happiness this summer with this delicious Summer Solstice Cordial.

 

Summer Solstice Cordial

2 tablespoons dried organic elderflower

2 tablespoons dried organic rose buds

2 tablespoons chopped dried peaches

1 tablespoon fresh or dried organic lemon peel

1 teaspoon organic fennel seed

2 cups port wine

Steep herbs and fruit in the port wine for one month then strain the herbs from the wine and enjoy. Make a summer party cooler by putting this cordial over ice and adding seltzer water and fresh squeezed lemon or lime.

 

How to Make Summer Solstice Cordial

1) Put dried herbs into a mortar and pestle and mash them as much as possible

2) Chop dried peaches into small pieces with a knife

3) Put herbs, fruit and wine into a sterilized jar.

4) Let sit in a cool, dry place for one month

 

Decanting the Cordial…

After one month you will participate in the ancient art of decanting (Fancy term for straining out the herbs from the alcohol).

To decant your cordial you will need a clean sterilized glass jar, funnel and cotton muslin.

1) Place a funnel into the jar and lay the cotton muslin on top of the funnel

2) Pour the wine and infusing herbs and fruit through the muslin and funnel being careful not to let the herbs spill over the side of the muslin into the funnel and jar

3) If the herbs spill out of the muslin into the jar, get a clean jar and start over

4) When all of the liquid has drained through the cotton muslin cloth and funnel into the jar, then squeeze the rest of the liquid out of the dried plant material through the muslin into the jar.

5) Discard the strained out herb material into the compost or just put it on the dirt in your garden. The liquid left behind is your herbal cordial.

Cordials are alcoholic herbal drinks that have a variety of uses. Cordials can be sipped before and after dinner as digestive tonics. Cordials are perfect for toasts at special occasions and to pair with foods and desserts. Herbal cordials are also great cooking companions. Add them to cakes and desserts just as you would vanilla extract. Use them in marinades and glazes and put a dash into drinks. We add Summer Solstice Cordial to homemade whipped cream and put it on fresh summer fruit. Cordials can be stirred into jams and other dessert sweeteners or sprinkled onto yams and vegetables before baking. Add some cordial to your next batch of chutney or pie filling or put a tablespoon or two into morning pancake batter and French toast egg batter. During the cooking process the alcohol precipitates off leaving behind a melody of flavor for you to enjoy.

    My favorite summer herbal recipe is
    Rosemary Peach Lemonade

    Ingredients
    Rosemary Syrup:

    6 small sprigs fresh rosemary, plus more for garnish
    3/4 cup sugar
    1 cup water
    1 1/2 cups good-quality peach nectar
    3 ripe peaches, pitted and sliced into thin half-moons (about 18 slices each)
    1 ice cube tray frozen lemon juice (12 cubes equals 1 cup of juice)
    1 to 1 1/2 cups water

    Directions

    Rosemary Syrup:

    In a medium saucepan, combine the rosemary sprigs, sugar, and water, and bring to a simmer. Let cook for about 10 minutes until slightly thickened and well-infused.

    Remove from heat and strain. Discard rosemary sprigs. Let cool before using.

    In a large pitcher, combine cooled syrup, peach nectar, peach slices, and lemon juice ice cubes. Add enough water (about 1 to 1 1/2 cups) to top off, leaving room for additional ice cubes to serve.

    Add more ice right before serving. Serve a fresh rosemary sprig in each glass.

    My favorite summer recipe is just to go out to my herbal garden…clip fresh herbs, dandelions, & chop them up over a fresh lettuce from the garden, tomatoes, cucumbers, peppers, green onion, legumes, sprouts, nutritional yeast and then drizzle with beautiful pumpkin seed oil, apple cider vinegar and chia & pumpkin seeds!     i love fresh wild blue berries the most about summer. don’t have a specific recipe just yet, but this one was inspiring, i don’t drink at all but i can easily incorporate these herbs into a berry smoothie idea i’ve been concocting (omitting the port wine and peaches due to allergy, of course).

    Hmmm…favorite summer recipe… This is pretty simple, but one that I love for camping is a scrub: coffee grounds, some sea salts, and lavender oil. Great for camping because you can get clean without soap or even too much water (just enough to get wet and rinse off). You can add some olive oil to it if you like.

    I like to make a pitcher of Fresh Green Tea, Sweeten with a little stevia and add fresh mint , just cut it and drop it in, between the fragrance and the flavor I am one happy camper!

    I like to pick wild rose petals on walks with my kids and dog where I live. The roses are abundant. Then I make rose tea from the fresh or dried petals or even put a few petals in my sports bra while I’m picking so while I walk I smell sweet roses the whole way :) .

    And my favorite herbal combo for all year, but especially important in summer, is homemade deodorant. I combine and heat coconut oil, vitamin E, shea butter, arrowroot powder, baking soda and any combo of essential oils–lavender and orange, clove, geranium and a few drop of tea tree, then cool in a small container to apply with fingertips. I don’t measure anything, sorry :/

    my favorite summer herbal drink is to add sparkling water to a blend of tasty tinctures and glycerites. I start by muddling some fresh ginger, then add some cinnamon tincture, and whichever ticture you love or are in need of, e.g. lemon balm, oats, hawthorn are all lovely. . add some grated nutmeg, fresh lemon juice amd if you like your drinks on the sweeter side then add some herbal glycerite or elixirs. i like elderberry and any conifer elixirs, or just use some maple syrup, honey or a simple syrup if you use sugar.

    OOh this sounds yummy! and would love to add her book to my collection! A family favorite around here is Rosemary Lemonade.While making a Simple Syrup add a couple of sprigs of Rosemary. Remove sprigs before adding to Lemon juice then add a couple of fresh sprigs to pitcher when serving. Looks and tastes refreshing!

    1. Favourite herbal recipe is homemade garlic butter with fresh rosemary and chives from the garden.

    I use a french grinder to turn 9 cloves of garlic to a workable paste and then simmer them for 20 minutes in 450g of butter with chopped up fresh chives and rosemary. I then pour into mason jars and let set.

    Love making anything Lavender:
    Lavender Lemonade

    makes 12-15 servings
    Ingredients

    4 cups of water divided
    3/4 cup sugar
    4 sprigs of lavender (with buds if you’d like)
    1 1/2 cups lemon juice
    2 cups of ice cubes

    Method

    Mix 3 cups of water with the sugar in a pot and bring to a boil on the stove. Stir to make sure the sugar is melted and add the lavender. Remove from the heat and let steep for at least 10 mintues (the longer you steep the stronger the lavender flavor).

    Pour lemon juice and remaining 1 cup water into a large jug or pitcher. Strain lavender sugar syrup and pour into the pitcher. Add ice and mix well.

    Mint lemonade tea
    I put about 2 gallons of water in a pot with two large tea bags, half a cup of sugar and a handful of fresh mint. Bring it to a boil and let it cool with the tea bags still in. Add one 12 ounce can of frozen lemonade. When ready to serve, pour over lemon slices and fresh mint.

    And, my new fave summer herbal recipe—herbal lemonade!!!
    I use a quart jar to infuse various combinations of herbs for 15 mins. My favorite thus far have been dandelion leaf hibiscus, dandy lavender, tulsi lavender, and nettles and lavender. It’s easy, just pour boiling water over the herbs and let sit. Then, I strain into a half gallon mason jar and add honey to taste while still hot. Then, add lemon (8-10 fresh lemons or lemon or lime juice to taste), a tray of icecubes, and top off with cold water. AMAZING! I’ve been keeping this in the fridge—so refreshing after coming in from the gardens!

    1 part Chamomile flowers
    1 part Catnip herb
    1 part Lemon Balm herb
    1 part Passion Flower

    I am a toddler herbalist and just harvested my 2nd year Angelica…here is the recipe I tried.
    I know sugar is not one of the best things for you…but we all need a lil sweetness in our lifes…plus was not finding alot of other recipes for Angelica…other than dried for tea and tincutes!

    Candied Angelica

    1 cup sugar
    1 cup water
    ½ pound thick green angelica stems, cut into 3- to 8-inch lengths
    Extra-fine sugar, for dusting

    Bring the sugar and water to a boil, stirring. Remove the pan from the heat.

    Bring a large saucepan of water to a boil. Add the angelica stems. Over medium-high heat, cook the stems for 4 to 6 minutes, until they are tender when pierced with a fork. Their sharp, bitter aroma will fill the air. Drain the stems, rinse them in cold water, and drain them again. Peel off the thin skin. A vegetable peeler may help, but most of the skin should rub off easily with your fingers. Put the stems into a bowl, pour the syrup over them, and weight them with a small plate.

    The next day, drain off the syrup into a saucepan. Boil it until it has thickened a bit (to about 225 degrees F), and pour it over the angelica. Repeat this process the next day, and again the day after. At this point the stems should appear partially translucent.

    On the following day, pour off the syrup again, and boil it to the thread stage (230 degrees F). Add the angelica stems, and bring the syrup back to the thread stage. Drain the stems in a colander, and then place them on a rack or screen in a warm place until they are dry to the touch (a food dryer or a convection oven set on very low heat will speed the drying).Dust the dried stems with sugar, and store them in an airtight container.

    3 heaping tablespoon of dried lavender

Strain out lavender and press buds into the bottom of the strainer to release any syrup left behind. In a larger pitcher, combine lemon juice, lavender syrup, and water. Stir and chill. Serve cold, over ice.

    Super Easy Fresh Coconut Smoothy
    1 Young Thailand Coconut
    2 TBS Mint leaves
    1/2 of a Lime

    This is so cooling on those hot summer days. And it’s easy to make. Take the young coconut and open it with a very strong knife or cleaver. This takes some skill! But be careful not cut yourself. Your drink should be white, not red!

    Take the water of the coconut and blend with the meat of the coconut. In the blender squeeze the juice of the lime and add 1TBS of the mint leaves. Blend until smooth consistency. Then chill in the refrigerator and when ready to drink add the rest of the mint leaves! So easy and refreshing!

    I just found your blog and love it!!

    My herbal recipe is to make lots of hibiscus tea with honey, keep it in the fridge. It’s nice to drink alone, but I now add a generous splash of it to my blueberry green smoothies.

    It makes such a big difference in the taste of the smoothie! My old smoothie recipes have taken on a summer fresh feel; hibiscus anti-oxidants included ;)

    Using a food-grade peppermint essential oil I like to dip a toothpick in the bottle then swirl the toothpick into the sections of and ice cube tray. Very tasty, cooling and refreshing!

    I have tried to introduce my fellow military wives to herbs and the most popular and easiest recipe they have enjoyed is steamed milk with lavender buds. Our base just started carrying lavender buds so hopefully more military families here will spread the word and we will get a little herbal community going! =) It is wonderful as a wind down drink in the evening, not only for ourselves, but for our children! Add a little honey or cinnammon and call it a day. Your babes will sleep soundly. =)

    High-C Herbal Berry Pops from Frugally Sustainable blog

    Supplies

    -reusable popsicle molds
    -blender
    -equal parts of elderberries, hibiscus flowers, alfalfa leaf, rose hips to create my nutritious High-C Herbal Blend
    -jar or pot

    Ingredients

    -2 cups prepared High-C herbal tea
    -1 cup frozen or fresh berries
    -a handful of seasonal greens
    -sweetener of your choice

    Method

    1. Place 3 tablespoons of High-C Herbal Blend in a jar or pot and pour 2 cups of boiling water over the herbs. Steep for 15 minutes in order to prepare a strong tea. Note: Click here to read more about how to prepare a medicinal tea.
    2. Strain the tea, reserve the liquid and compost the herbs.

    3. In a blender combine the tea, berries, greens, and your sweetener of choice. Blend until smooth.
    4. Pour mixture into reusable popsicle molds.
    5. Freeze.
    6. Best enjoyed outside

    My favorite recipe is any kind of pesto! I don’t really measure for this and change up whatever leaves I am using depending on what I have a lot of at the time.

    Pesto:
    1 handful basil leaves
    1 handful stinging nettle (already steamed 3-4 minutes)
    a splash of lemon juice
    3-4 garlic cloves
    1 handful toasted pinenuts
    ….place in blender and then pulse while slowly adding olive oil til it looks yummy :)

    My favorite summer recipe is cooked unopened milkweed blossoms with garlic scape pesto!

    Harvest at least 20 heads of unopened milkweed blossoms.
    Next boil twice (one minute in each pot).
    Next boil them for the final time for 8-10 minutes until they are bright green and the texture of peas.

    Set aside, and head to the food processor!

    Mix in:

    5 garlic scapes
    a BIG handful of nettles
    1 cup of basil
    1/4 cup raw parmesan cheese
    1/4 cup walnuts or pine nuts
    1/2 of a lemon
    drizzle of olive oil
    Salt to taste

    Blend all ingredients and then pour pesto over the milkweed blossoms and enjoy. My absolute favorite recipe of all time!

    This is one of my favorite summer recipes, enjoyed alone or with friends on a sunny afternoon :)

    Spiked Lavender Coconut-Lime-Lemonade ♥

    Ingredients: Lemons, raw honey, lavender essential oil, spring water, vodka, coconut flakes, limes, coconut sugar

    Method: I squeeze several lemons, depending on how many will be sharing with me. I sweeten, to taste, with raw honey. I then add 1 drop lavender essential oil. If I am making a big pitcher, it will be more than one drop, and it depends on how lavender-y you like it. A little lavender EO goes a long way!!
    I then add nice cold spring water, and taste as I go, keeping it strong but not TOO strong. I like it to be refreshing.

    As for the “spiked” part, about a month ago I filled a quart jar with coconut shavings and the zest and juice of three limes. I let this macerate in vodka for about three weeks before straining and dissolving a few tablespoons of coconut sugar into it. This is not so much medicinal but very very delicious! I add just a splash of this to my prepared lavender lemonade…. but you could add as much as you want!
    (If you want to make this recipe now and don’t have the pre-infused coconut lime vodka, it also works to zip the ingredients in a blender for a few minutes and then strain!)

    I serve over ice in a glass rimmed with a mix of coconut flakes and coconut sugar, with a lime wedge. ♥ ♥ ♥ Happy summer!!!

    My favorite Love Potion Lemonaide:
    Rose Petals, Rose Hips, Hibiscus, Goji Berries
    All brewed into a warm tea. Add Lemon Juice and Raw Wildflower Honey! So refreshing and Beautifull. You may keep it warm or ice it!

    Mint Ginger Green Tea: You will need a large pot. 6oz Fresh ginger, peeled & smashed, 3 bags of green tea, 5 bags of mint tea, 10 cups boiling water. Steep 7-8 minutes. Stir in 3 tbsp blueberry/any honey (or stevia). Let cool. Serve over ice with a splash of Urban Moonshine Joy Tonic, a sprig of mint & a honey stick. ~Enjoy!

    Summer Herbal Lemonade Recipe:
    3 quarts of filtered or spring water
    1/4 cup of lavender blossoms
    1/4 cup of milky oat tops
    1 cup of fresh mint leaves
    1 cup of fresh basil leaves
    Freshly squeezed lemon juice (from 5-6 lemons)
    3/4-1 cup of sweetener of choice (honey, cane sugar, agave nectar, maple syrup)

    In a large pot, Boil water, and then turn off heat. Add sweetener and stir until melted & combined. Add lavender blossoms and milky oat tops, cover pot, and let steep for 10 minutes. After 10 minutes, roughly chop or tear the fresh mint and basil leaves and add to the pot, cover, and steep for another 5-10 minutes. After the second steep, add the lemon juice, and stir all the goodness together. Then strain and bottle the mixture (I use quart glass jars), cool and enjoy! The beautiful purply-pink colour will perk anyone up!!

    Chocolate and Flowers Facial Mask
    1 teaspoon of French green clay
    1 teaspoon of cocoa powder (plain, unsweetened)
    1/2 teaspoon of Bentonite clay
    1/2 teaspoon finely powdered lavender blossoms
    1 drop of lavender essential oil

    In a small bowl, add all the ingredients, and stir to combine. SLOWLY add water, about 1 teaspoon at a time, stirring the mixture after each added teaspoon. You’ll want the mixture to be smooth and creamy, and easy to spread. This batch makes enough to generously apply to your face, neck and chest. Once applied, sit back and relax in the chocolately-lavender goodness for 15-20 minutes, or until the mask has dried. To remove: rinse off in the shower, or dampen a soft wash cloth and apply as a compress first to your face/neck/chest to soften the mask. Once the mask is softened, gently wipe the mask off with the wet cloth. Follow up with your favourite toner and moisturizer. Enjoy the glow!!

    Liked Mountain Rose Herbs, and my favorite recipe for drinks in the summer is very simple.

    Mint Lemonade

    1 tbsp Mint simple syrup to every cup of freshly squeezed lemon juice.

    I like mine with a lot of zip, but you can add more or less sugar, honey, or agave according to taste.
