Spring Tonic Vinegar Recipe & Giveaway!
In celebration of this year’s Spring Equinox, we are excited to partner with our customers Elie and Kristen of the Portland Apothecary for this very special recipe and giveaway! That’s right…they are offering up an entire Spring Share of handcrafted herbal goodies to one lucky reader, plus a gorgeous infused vinegar recipe for us all to enjoy.
Let’s meet the herbalists! Elie grew up on a biodynamic farm in the hills of Pennsylvania, where the rhythms of the four seasons were her first teachers. She helped her mother brew elderflower syrup in the spring, harvested wild raspberries in the summers, pressed apples for cider in the fall and helped her father tap maple trees for sap in the late winter. Since then, her intrigue with the magic and medicine of plants has been a calling and a journey. Elie interned on farms all over the world, attended Aprovecho Center for Sustainability, and completed her course in native plant herbalism at the Columbines School of Botanical Studies.
Kristen was first drawn to Western Clinical & Energetic Herbalism and has studied with amazing teachers for over a decade. Then came gardening and more gardening, and then exploring the wilds to see plant families and their environments. Her studies led to a master’s degree in Traditional Chinese Medicine, which took her down a path so rich in history and plant knowledge that she has committed to being a perpetual student. Kristen is also in private practice as a licensed acupuncturist.
Together, Elie and Kristen created the Portland Apothecary with a vision to help maintain and restore the health and vitality of folks in their community.
The Recipe!
Here at Portland Apothecary we love to make seasonal vinegars as a tasty way to get in our daily herbs! For spring, we’ve made our Spring Tonic Vinegar which is nutrient dense and full of minerals, so you can take full advantage of the vitality of the herbs as they emerge from their winter slumber.
The alkalizing nature of the Apple Cider Vinegar is another healthy addition to your diet, as we’re all trying to clean up a bit from winter’s excesses. As with all of our remedies we like to make them versatile in use and also in the way they’re made. With this recipe, we used a variety of fresh and dried herbs that we had on hand, so feel free to do the same. You can easily use all fresh herbs or order them all dried and beautiful from Mountain Rose Herbs for this recipe. We used the following:
Spring Tonic Vinegar
Ingredients
¼ cup dry organic nettle leaf
¼ cup dry organic horsetail
½ cup organic parsley
½ cup organic dandelion leaf
½ cup organic rosemary
Apple Cider Vinegar
Quart Jar
Directions
**If you are using all dried, or all fresh herbs, simply use equal parts.
Coarsely chop all herbs and combine in a quart jar.
Cover with Apple Cider Vinegar. Place cap on tightly and shake vigorously. Label your jar with your ingredients and the date. You think you will remember, but believe us, you may not! Place in a dark, dry place and shake daily. After a month, strain herbs through cheesecloth into a clean quart jar, squeeze out the herbs to get every last drop, and you’re done. Oh, apart from labeling again. We like to layer our cheesecloth to avoid particles getting through and leaving sediment. Also, if you have a plastic cap, use it, as it will be less reactive with the vinegar than the usual metal caps.
You can either take this Spring Tonic Vinegar straight, a couple of tablespoons a day, or you can toss it with some spring greens or pea shoots to make a really delicious salad.

What an AMAZING giveaway! My favorite spring herb is definitely sage. I love making sage infused honey, sage tea when I’m sick, and sage in my cooking! I love Balsam Poplar Leaf Bud Resin! The Balm of Gilead! It is right now oozing out of the buds here in Canada and forming bright red crystal droplets that shine in the sun. My favorite spring herb is cilantro – it grows best in spring here where I live. Summers are too hot for it! If I plant at just the right time I can harvest it and enjoy it before the annual southern heat wave sets in!

Hurray, I just did all of the above, except for the Pinterest and got a little lost watching some great youtube videos, which is why I haven’t really gotten involved in Pinterest. There are too many things to see there and too much to do in a day with only 24 hours. I still haven’t figured out how to stretch a day. Thanks for a great site, great products and a bounty of great info. One of my favorite firsts of spring is watching for the crocus to peek out, but we still have piles of snow to melt before any of that can happen here in Alaska. Enjoy your spring wherever you are, whenever it comes:)

I LOVE dandelions. I used homemade dandelion tincture as a tonic on a regular basis. My grandfather used to regularly make dishes with dandelions and every year I do the same in his honor. Plus, what could be more delightful than a sunny, yellow dandy flower!!!!

Favorite spring herb? Oh my….my rosemary is may all year herb so I guess i can’t claim that! I would say Rue. Here in NJ I am already seeing my rue plants begin to come up for the year, in another few weeks they’ll be sprouting little leaves – the early leaves are great to make cleansers with, soaps, oils, etc. Rue is great in a salad as well!

Dandelions, of course! The “weed” my father always tried so hard to get rid of grows abundantly in our yard. My favorite spring time herb is dandalion, lemon balm an boneheal. So many uses. Boneheal an lemonbalm i make a facial cleanser my daughter uses an swears by, as well as ointment/cream we use in place of neosporen an benyedrel cream. We use this not only for ourselves but our animals as well.

Hello! My favorite Spring herb are cottonwood buds. I harvest the wind fallen buds off the ground every year about this time, just enough for a few salves to last my family the year. Plus, it’s a great excuse to go take a Spring hike along the river in which the huge trees grow all along!

Nettles is #1 this year.
I was lucky enough to find the patch – still young and hiding under the weed/grass covering – and pick some yesterday. Last night’s dinner – nettles sauteed with a generous addition of onion, garlic, and mushrooms. Sprinkled with tamari and a few drips of toasted sesame oil. I feel better already. ;>

My favorite spring herb- Basically anything I can cook with. A few days ago I started my seedlings and I am just waiting for them to sprout. I really enjoy growing cilantro and chives because we use them a lot in our home. We enjoy a lot of Mexican dishes so it is nice to have fresh cilantro and garlic chives at your disposal. Last year the cilantro climbed the patio wall so it got really tall and we were able to move it inside and use it a little into winter.

My favorite herb is Dandelion, mostly because of an emotional attachment due to memories picking the flowers as a kid. I’m actually planning to get a dandelion tattoo! My favorite spring herb has to be the dandelion. It is so versatile, spring greens, coffee sub, fried (mushroom)flowers, beneficial insect/honeybee food and of course the happy yellow blooms shining like the sun bring a smile!

I think I’d have to say dandelion … the leaves are so tender in the spring and I love them in a salad, or if I’m feeling wicked, I’ll fry up a piece of bacon, crumble it and a hard-boiled egg over the leaves and sprinkle with lemon. Believe it or not it’s delicious. I’ve liked your page, joined on FB and I want to say thanks for all the great info. Newsletter, too.

Just discovered your wonderful blog and all the info…love it! I live on 8 acres with lots of wild edibles, which I have been learning about. There are so many favorites, but right now I am crazy about VIOLETS! Leaves and flowers. Yum!
